I was born and raised in the Philippines and moved to Atlanta three years ago. Apart from the people, it’s the food that I miss so much! Whenever I get homesick, I cook something Filipino to cheer me up and it always works. 😉

Tocino is a Pinoy breakfast staple most popularly made with pork but since my husband and I are trying to eat healthier after the holidays, I decided to make the chicken version this time. Enjoy!


  • 1 pound chicken breast tenders sliced into bite-sized pieces
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/8 cup banana ketchup
  • a few dashes of soy sauce
  • salt and pepper to taste


  1. Mix all ingredients together and cure overnight.
  2. Fry desired pieces or freeze until needed.
